Salted Peanut Butter Squares with THC

The vegans of the world can rejoice! Salted Peanut Butter Squares are a vegan, yet still decadent sweet treat. We’ve elevated a cookie crust, layered with peanut butter, and caramel filling with cannabis-infused coconut oil. Trust us. It will be all you can do to keep yourself going back for seconds, if not thirds. Just remember, with several additions of cannabis-infused coconut oil contained in this recipe, each square packs a punch.
Crust Ingredients
- 1/2 cup Almonds
- 1 cup Rolled Oats
- 1/4 tsp Sea salt
- 1/4 cup Cannabis Infused coconut oil (melted)
- 3 tbsp Maple syrup
- 2 tbsp Smooth peanut butter
Filling Ingredients
- 1/2 cup Cannabis-infused coconut oil
- 1/3 cup Coconut cream (chilled)
- 1/2 cup Maple syrup
- 3/4 cup Smooth peanut butter
- 1/4 tsp Sea salt
- 1/2 tsp Vanilla extract
Suggested Topping Ingredients
- Vegan coconut whipped cream
- 1/2 cup Chocolate chips
- 1/2 cup Chopped nuts, Skor pieces, or flaked coconut
Equipment
- 8x8 inch square pan
- Parchment paper
- Food processor
- Medium pot
- Whisk
- Freezer
Directions
- Preheat the oven to 350°F.
- Lightly grease the pan with regular non-infused coconut oil, including sides. Line with parchment paper, with the paper overhanging the sides.
Crust Directions
- Add almonds, oats, and salt to a food processor. Blend until it reaches the consistency of coarse flour.
- In a medium pot over medium heat, melt a ¼ cup of the Cannabis Infused Coconut Oil.
- Once melted, add to the food processor mixture with the maple syrup and peanut butter. Pulse until it forms a wet dough.
- Scoop out the dough into the grasped and lined pan. Using a spatula or your hands, firmly press the dough evenly across the bottom.
- Using a fork, poke rows of holes across the surface of the crust before baking.
- Bake for ten minutes or until it begins to puff up. It will look slightly undercooked.
Filling Directions

- Once melted, add in all other filling ingredients. Whisk until smooth.
- Pour the entire mixture over the baked crust. Gently push it into the corners to achieve an even surface.
- Place in the freezer to chill for two hours.
Topping Directions
- After two hours, remove the squares from the freezer and let it sit for ten minutes.
- Using a knife, work around the edges of the pan to gently loosen the squares. Using the overhanging edges of the parchment paper, pull the squares out on to a cutting board.
- Cut squares into single servings. To store, wrap each square in a parchment paper, and store in an airtight container in the refrigerator or freezer.
- When ready to serve, add a dollop of Coconut Whipped Cream to each square and your choice toppings.
