Super Potent Pesto Pasta

One of the fastest main dishes to whip up, with the least elbow grease, is Super Potent Pesto Pasta. The herbal intensity of the fresh basil leaves perfectly compliments the Cannabis-infused Olive Oil. As the steamy pasta hits the bowl, don’t forget to toss with an extra helping of fresh parmesan cheese, with a squeeze of lemon to cut the richness.
Ingredients
- 2 cups packed fresh basil leaves
- 2 garlic cloves
- 1/4 cup pine nuts (or any other nut)
- 2/3 cup Infused Olive Oil
- Salt and pepper to taste
- 1/2 cup freshly grated parmesan cheese
- 450 grams of dried pasta (any shape)
- Juice of ½ a lemon

- Food Processor or Blender
- Medium pot
- Cheese grater
- Mason jar for storage
- Spatula
Pesto Directions
- Add basil leaves, garlic, and nuts into the food processor—pulse until blended. You are looking for a smooth but still slightly crunchy consistency (think crunchy peanut butter).
- While the food processor is on, stream in infused olive oil until incorporated.
- Using a spatula, scrape down the sides of the food processor as needed.
- Once combined, scrape into a glass jar for storage.
- Top with more (regular) olive oil if not using immediately. Keep refrigerated.
Pasta Directions
- Salt a pot of water well, and bring to a boil over high heat.
- Add pasta and cook according to the package directions.
- Strain pasta, reserving ¼ cup pasta water.
- Add pasta back into the pot, adding ¼ cup of Super Potent Pesto and a ¼ cup of the parmesan cheese.
- Stir until all pasta is coated, adding a few spoonfuls of the pasta water to emulsify the sauce. If needed, add more pesto or pasta water (a spoonful at a time) until you've achieved the desired consistency.
- Top with remaining parmesan cheese and a fresh squeeze of lemon. Serve warm.
