It’s potluck time, and it’s cannabis-themed. What better dish to bring to a “pot” luck among friends than Macaroni Salad with a Twist? Feel free to adlib with whatever vegetables you have on hand, or add a protein like chopped boiled eggs, ham, or chicken.
Plus, let’s be honest —the best part of this recipe is the homemade Cannabis-Infused Mayo. You’ll learn how to make mayonnaise from scratch, and have a potent condiment ready to go in your refrigerator. You can easily adjust the ratio between the regular and infused Olive Oils to adjust potency. More infused Olive Oil will increase the THC per serving.
Ingredients for Ganja Mayo
- 2 egg yolks
- 2 tbsp mustard
- 4 tbsp white wine vinegar
- 2 tsp salt
- 1¾ cups Olive Oil (regular, non infused)
- 2 tbsp Infused Olive Oil
Ingredients for Pasta Salad
- 8 oz macaroni noodles
- 1/2 cup diced sweet gherkins
- 3/4 cup diced red bell pepper
- 1/3 cup diced celery
- 1/3 cup diced red onion
- 3/4 cup Ganja Mayo (*see above)
Equipment
- Food Processor (or Blender)
- Large Serving Bowl
- Large Pot
- Medium Mixing Bowl
Directions for Ganja Mayo
- Combine all ingredients for the Gania Mayo, except oil, in a food processor. Blend until smooth and thoroughly combined.
- With the food processor running, slowly drizzle in oils, starting with canola oil. This creates an emulsion, which transforms the mixture into a smooth, and mayo-like consistency.
- If the sauce begins to break, add a few drops of warm water to fix the emulsion.
- Finish with the Infused Olive Oil. Again, slowly drizzle it in, to continue the emulsification.
- Keep refrigerated until ready to use.
Directions for Pasta Salad
- Prepare the pasta according to the directions on the package. Drain and allow to cool.
- Combine cooked pasta with all diced vegetables, and pickles. Toss until well mixed.
- Prepare the dressing. In a separate bowl, add all remaining ingredients, including Ganja Mayo. Whisk until smooth and well combined.
- Pour dressing over macaroni mixture and gently toss until completely coated.
- Refrigerate until ready to serve.
