- Using a wooden spoon, stir in oats until combined.
- Add in chocolate chips and raisins if using, mixing until evenly dispersed.
- Chill in the refrigerator for at least an hour.
- Preheat oven to 350°F.
- Scoop out roughly three tablespoons of cookie dough, and place four inches apart on a cookie sheet.
- Bake for 13 minutes, until lightly browned on the sides.
- Allow to cool on the sheets for at least five minutes before moving to a wire rack to cool.
- Store in an airtight container for up to a week.
