  8. Pour into the waiting pan and put it in the oven for 25 minutes. The top will crack and appear glossy.

3 cups old-fashioned whole rolled oats

  5. Add dry ingredients to butter mixture, a little at a time until just combined. Do not overbeat.
  6. Using a wooden spoon, stir in oats until combined.
  7. Add in chocolate chips and raisins if using, mixing until evenly dispersed.
  8. Chill in the refrigerator for at least an hour.
  9. Preheat oven to 350°F.
  10. Scoop out roughly three tablespoons of cookie dough, and place four inches apart on a cookie sheet.
  11. Bake for 13 minutes, until lightly browned on the sides.
  12. Allow to cool on the sheets for at least five minutes before moving to a wire rack to cool.
  13. Store in an airtight container for up to a week.
